How long do you cook boil and egg in water to make it hard boiled vs. soft boiled and how long for poached?
when poaching, the egg is broken into swirling water with a small touch of vinegar in it. That is what keeps the egg together. You cook a poached egg until the white is totally solid and you can either leave the yolk alone or break it to cook it through. If you want to break it, wait until the white is almost done. Salt and pepper the egg as it cooks. Poaching with a soft yolk takes abour 5 minutes. To get the yolk cooked well, let egg cook 5 minutes and then break the yolk and cook another 3 minutes, or until the whole egg looks solid.
To boil an egg, place cold eggs in a cold pan and add enough water to cover eggs by about an inch and still have at least an inch at the top of the pan. Bring to a boil. For soft boiled eggs, turn off and cover right after it comes to a boil. Take off heat and let sit for about 5 minutes before draining them and adding cold water to stop the cooking.
To hard cook eggs, after it comes to a full boil, let it cook for 10 minutes, then turn off heat and cover for 10 minutes. Drain and then flood with cold water to stop cooking. This method, if done correctly, yields yellow yolks (no dark halo around the yolk).
